Chickpea Summer Salad
IngredientsĀ
- 2 cans chickpeas, drained/rinsed 1 cucumber, dicedĀ
- 1Ā cup tomatoes, halved/dicedĀ
- ¼ cup onion, dicedĀ
- 2Ā cloves garlic, grated 1/3 cup parsley,Ā choppedĀ
- 2 tablespoons dill, choppedĀ
- ¼ cup oilĀ
- 1Ā tablespoon apple cider vinegar 1 tablespoon lemon juiceĀ
- ½ teaspoon saltĀ
- ¼ teaspoon pepperĀ
Directions:Ā Ā
- InĀ largeĀ bowl add chickpeas, cucumber, onion, tomatoes, dill, parsley, and garlic. Mix gently to combine.Ā InĀ smallĀ separate bowl whisk together oil, vinegar, lemon juice, salt, and pepper.Ā Ā
- Pour oil mixture over chickpeas and mix.Ā Ā
- Serve immediately or cold. Serves 5.Ā

Three Color Bean Salad
Ingredients:Ā Ā
- 1 can black beans, drained and rinsed 1 can white beans, drained and rinsed 1 can corn, drained and rinsedĀ Ā
- 3 stalks celery, diced 1 small onion, diced 1 bell pepper, dicedĀ Ā
- 3 tablespoons lemon juice 3 tablespoons oilĀ Ā
- 6 tablespoons apple cider vinegar 1 ½ teaspoon saltĀ Ā
- 1 ½ teaspoon sugarĀ
Directions:Ā Ā
- In medium bowl add black beans, white beans, corn, celery, onion, and pepper.Ā Ā
- In a small bowl whiskĀ together lemon juice, oil, vinegar, salt, and sugar.Ā Ā
- Pour dressing over salad and mix well.Ā Ā
- Serve cold. Serves 6.Ā

Black Bean Corn Salad
Ingredients:Ā Ā
- 1 can black beans, drained/rinsed 1 can corn, drained/rinsedĀ Ā
- 1 cup tomatoes, halved/dicedĀ Ā
- ¼ cup onion, dicedĀ Ā
- ¼ cup celery, dicedĀ Ā
- ¼ cup oilĀ Ā
- 1 tablespoon apple cider vinegar 1 tablespoon lemon juiceĀ Ā
- ½ teaspoon saltĀ Ā
- ¼ teaspoon pepperĀ
Directions:Ā Ā

- 4 large tomatoes (1 pound), cut into wedgesĀ Ā
- 2 smallĀ zucchini, sliced thinĀ Ā
- 1 bell pepper, sliced thinĀ Ā
- 2 ½ tablespoons apple cider vinegarĀ Ā
- 1 ½ tablespoons oilĀ Ā
- ½ tablespoon sugarĀ Ā
- ½ teaspoon saltĀ Ā
- ½ tablespoon fresh basilĀ Ā
- ½ tablespoon fresh parsleyĀ
Directions:Ā Ā
- InĀ largeĀ bowl add tomatoes, zucchini, peppers.Ā Ā
- InĀ smallĀ bowl whisk together vinegar, oil, sugar, and salt. Stir in fresh basil and parsley.Ā Ā
